Homemade Elderflower Cordial the recipe for the most beautiful summer drink
There is one week a year – sometimes two – when the elder trees blossom. White umbels, honey-sweet fragrance, the best smell of the entire year. And every year I take my basket and go to the park near our house to pick elderflowers. My neighbour found this strange at first. Now she waits for a little bottle of my cordial.

The recipe for approx. 1.5 litres of cordial
Ingredients: 20-25 elderflower umbels, 1.5 litres water, 1 kg sugar, 2 unwaxed lemons (juice and slices), 1 tsp citric acid (optional, extends shelf life).
Method: Shake the elderflowers briefly to remove insects (do not wash – this rinses away the flavour). Bring water and sugar to the boil until fully dissolved. Leave to cool until lukewarm. Add elderflowers, lemon slices and juice. Cover and leave to steep in the fridge for 24-48 hours. Strain through clean muslin or a coffee filter. Pour into sterilised bottles. Keeps in the fridge for 4-6 weeks, or freeze for up to a year.
How to pick elderflowers timing and selection
The ideal time to pick: when the umbel is fully open and all flowers are white and almost completely open. Do not wash – the pollen on the flowers contributes to the flavour. Simply shake briefly to remove insects.
